  • 60 g sugar
  • 250 ml cream
  • 2 tsp gelatin

Method

  1. Step 1

    Blend the strawberries into a smooth puree and strain out the seeds for a silkier finish.

  2. Step 2

    Whip the cream with the sugar until it reaches soft peaks.

  3. Step 3

    Fold the strawberry puree into the whipped cream until evenly pink and smooth.

  4. Step 4

    Spoon the mousse into glasses.

  5. Step 5

    Chill for at least 2 hours until lightly set.

  6. Step 6

    Top with extra strawberries before serving.
