Ingredients
- 180 g dark chocolate
- 300 ml double cream
- 2 eggs, separated
- 30 g sugar
- 1 tsp vanilla extract
Method
Step 1
Chop the dark chocolate, melt it gently over a bowl of simmering water, and let it cool for 5 minutes.
Step 2
Separate the eggs, then whisk the yolks with half of the sugar and the vanilla until smooth.
Step 3
Stir the melted chocolate into the yolk mixture until fully combined.
Step 4
Whip the cream to soft peaks in a cold bowl.
Step 5
Whisk the egg whites with the remaining sugar until they hold soft glossy peaks.
Step 6
Fold the whipped cream into the chocolate mixture, then fold in the egg whites in two additions until no streaks remain.
Step 7
Spoon the mousse into serving glasses and chill for at least 3 hours before serving.
