The food you can eat without looking at the plate is a different category of recipe. It needs to fit in one hand, hold its filling without dripping, and survive two minutes of being held during a corner kick. This is a real engineering brief, and most party recipes do not pass it.

The chicken parm sub is the gold standard. A roll that grills crisp on the outside and stays soft inside. A breaded cutlet, a generous spoon of red sauce, a layer of melted mozzarella, and the lid pressed down hard so the filling stays in. Cut into thirds and arranged on a board, it is the dish people reach for first and remember last.

Toasted is friendlier than untoasted for handheld food. The toast adds structure, the structure holds the filling.
