Barbecue food does not require a barbecue. The flavor profile, smoky paprika, brown sugar, vinegar, mustard, comes together in a saucepan and applies cleanly to anything you can roast or sear. A home oven can produce the same caramelized crust as a grill, with one important condition. The oven has to be hotter than you think.

Run the oven at 220 Celsius for any barbecue style cooking. The lower temperatures most home cooks default to produce stewed barbecue, not seared barbecue. The sauce stays liquid, the meat stays pale, the surface never sets. At 220 you get the dark edge that the grill would have given you, and the kitchen does not smell like smoke.

Sauce in two stages. The first half goes on the meat halfway through cooking. The second half goes on at the end, off heat.
