Turmeric Herb Shrimp Traybake
Preheat the oven to 220°C and line a large tray with baking paper.

Ingredients
- 450 g shrimp, peeled and deveined
- 150 g carrots, sliced thin
- 150 g tomatoes, diced
- 280 g couscous
- 30 ml olive oil and 10 g grated turmeric
- 15 ml chopped coriander and 1 lemon, cut into wedges
- 15 ml olive oil

- black pepper
Method
Step 1
Preheat the oven to 220°C and line a large tray with baking paper.
Step 2
Spread 150 g carrots, sliced thin and 150 g tomatoes, diced on the tray.
Step 3
Add 450 g shrimp, peeled and deveined to the tray and season everything with salt and black pepper.
Step 4
Drizzle the tray with 30 ml olive oil and 10 g grated turmeric and toss everything until coated.
Step 5
Roast the tray for 18 to 22 minutes until the vegetables are tender and browned in spots.
Step 6
Cook 280 g couscous according to the package directions while the tray roasts.
Step 7
Serve the roasted mixture over the cooked couscous and finish it with 15 ml chopped coriander and 1 lemon, cut into wedges.
