Tomato Basil Chicken Rice

Bring a large pot of salted water to a boil and cook 300 g cooked rice until just tender.

Ingredients

  • 450 g chicken breast, cut into bite-sized pieces
  • 300 g cooked rice
  • 15 ml olive oil
  • 150 g asparagus, cut short
  • 150 g peas
  • 120 ml tomato sauce
  • 15 ml chopped basil
  • salt
  • black pepper

Method

  1. Step 1

    Bring a large pot of salted water to a boil and cook 300 g cooked rice until just tender.

  2. Step 2

    Heat 15 ml olive oil in a large skillet over medium heat and cook 150 g asparagus, cut short for 2 to 3 minutes.

  3. Step 3

    Add 450 g chicken breast, cut into bite-sized pieces and 150 g peas and cook them for 3 minutes until hot and tender.

  4. Step 4

    Stir in 120 ml tomato sauce and let it simmer for 2 minutes.

  5. Step 5

    Drain the pasta and add it to the skillet.

  6. Step 6

    Toss everything together until the sauce coats the pasta evenly.

  7. Step 7

    Finish the pasta with 15 ml chopped basil and serve it hot.
