Ingredients

  • 220 g shrimp
  • 170 g jasmine rice
  • 1 cup mango
  • 1/2 large cucumber
  • 1/2 avocado
  • 1 tsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp chili flakes
  • 1 tbsp lime juice
  • 1 garlic clove
  • 2 tbsp chopped cilantro
  • to serve lime wedges

Method

  1. Step 1

    Cook the 170 g jasmine rice according to the package directions, then fluff it with a fork and keep it warm.

  2. Step 2

    Peel and devein the 220 g shrimp if needed, then pat them dry so they sear instead of steam.

  3. Step 3

    Dice the mango (1 cup), dice the cucumber (1/2 large), and slice the avocado (1/2).

  4. Step 4

    Put the shrimp in a bowl, add 1 tsp olive oil, 1/2 tsp salt, 1/4 tsp black pepper, 1/2 tsp chili flakes, and toss until every piece is lightly coated.

  5. Step 5

    Cook the shrimp in a hot pan for 1 to 2 minutes per side until pink and curled.

  6. Step 6

    In a small bowl, stir together the ingredients for the spicy lime garlic sauce with chili flakes and a little honey until smooth and balanced. Add a splash of water if you want it thinner.

    Arrange the prepared vegetables in separate sections so the bowl looks colorful and easy to eat.

  8. Step 8

    Build the bowl with the jasmine rice, add the cooked shrimp, arrange the vegetables around it, drizzle over the sauce, and finish with cilantro and lime wedges.
