Ingredients

  • 700 g sliced peaches
  • 90 g sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 180 g plain flour
  • 70 g sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 80 g butter
  • 160 ml milk

Method

  1. Step 1

    Heat the oven to 190°C and butter a baking dish.

  2. Step 2

    Toss the fruit with the sugar, lemon juice, and cornstarch, then spread it evenly in the dish.

  3. Step 3

    Whisk the flour, sugar, baking powder, and salt in a bowl.

  4. Step 4

    Rub in the butter, then stir in the milk until you have a thick spoonable batter.

  5. Step 5

    Drop spoonfuls of batter over the fruit and leave a few gaps for steam to escape.

  6. Step 6

    Bake for 30 to 40 minutes until the topping is golden and the fruit is bubbling at the edges.

  7. Step 7

    Rest the cobbler for 15 minutes before serving.
