Ingredients
- 190 g plain flour
- 70 g almond flour
- 2 tsp baking powder
- 1/2 tsp salt
- 160 g sugar
- 120 ml olive oil
- 3 eggs
- 150 ml orange juice
- zest of 2 oranges
- 1 tsp vanilla extract
- 30 g sliced almonds
- 100 g icing sugar
- 2 tbsp orange juice
- extra orange zest
- 20 g toasted sliced almonds
Method
Step 1
Heat the oven to 175°C and grease a 20 cm cake tin, then line the base with baking paper.
Step 2
Whisk the sugar, the eggs, the olive oil, and the vanilla until the mixture looks smooth and slightly lighter.
Step 3
Whisk in the orange zest.
Step 4
Whisk the flour, the almond flour, the baking powder, and the salt, then fold the dry mixture into the bowl just until no dry streaks remain.
Step 5
Scrape the batter into the prepared tin and smooth the top.
Step 6
Bake for 32 to 40 minutes until the center springs back lightly and a skewer comes out clean, then cool the cake completely.
Step 7
Whisk the icing sugar into a glaze, drizzle it over the cooled cake, and let it set before slicing.
