  • 180 g biscuits
  • 80 g melted butter
  • 300 g cream cheese
  • 200 ml whipped cream
  • 80 g icing sugar
  • zest of 2 lemons
  • 2 tbsp lemon juice

Method

  1. Step 1

    Mix the biscuit crumbs with the melted butter and press the mixture firmly into a lined tin.

    Beat the cream cheese and icing sugar until smooth.

  3. Step 3

    Whip the cream to soft peaks and fold it into the cream cheese mixture.

  4. Step 4

    Stir in the lemon zest and lemon juice.

  5. Step 5

    Spread the filling over the biscuit base and smooth the top.

  6. Step 6

    Freeze for at least 4 hours until firm.

  7. Step 7

    Slice into bars and serve slightly softened.
