Ingredients

  • 240 g plain flour
  • 150 g unsalted butter
  • 140 g sugar
  • 1/4 tsp salt
  • zest of 2 lemons
  • 200 g lemon curd

Method

  1. Step 1

    Heat the oven to 175°C and line a square baking tin with baking paper.

  2. Step 2

    Rub the butter into the flour, sugar, and salt until the mixture looks like damp crumbs.

  3. Step 3

    Press two thirds of the crumb mixture into the tin and bake it for 12 minutes.

  4. Step 4

    Spread the lemon curd over the warm base and scatter over the remaining crumble.

  5. Step 5

    Bake for 30 to 38 minutes until the top is golden and the filling is bubbling at the edges.

  6. Step 6

    Cool completely in the tin before cutting into bars.
