- 200 g crushed biscuits
- 220 g lemon curd
- 250 ml whipped cream
- 180 g mixed berries
Method
Step 1
Crush the biscuits and divide half of them between the serving glasses.
Step 2
Fold a little of the whipped cream into the lemon curd to loosen it.
Step 3
Spoon the lemon mixture over the biscuit layer.
Step 4
Add a layer of mixed berries.
Step 5
Top with whipped cream.
Step 6
Finish with the remaining biscuit crumbs and berries.
Step 7
Chill for 20 minutes before serving.
