Herbed Yogurt Lentil Rice
Bring a large pot of salted water to a boil and cook 300 g cooked rice until just tender.

Ingredients
- 350 g cooked lentils
- 300 g cooked rice
- 15 ml olive oil
- 150 g green beans
- 150 g peas
- 120 g Greek yogurt with 10 ml lemon juice
- 15 ml chopped mint and 15 ml chopped parsley
- salt
- black pepper
Method
Step 1
Bring a large pot of salted water to a boil and cook 300 g cooked rice until just tender.
Step 2
Heat 15 ml olive oil in a large skillet over medium heat and cook 150 g green beans for 2 to 3 minutes.
Step 3
Add 350 g cooked lentils and 150 g peas and cook them for 3 minutes until hot and tender.
Step 4
Stir in 120 g greek yogurt with 10 ml lemon juice and let it simmer for 2 minutes.
Step 5
Drain the pasta and add it to the skillet.
Step 6
Toss everything together until the sauce coats the pasta evenly.
Step 7
Finish the pasta with 15 ml chopped mint and 15 ml chopped parsley and serve it hot.
