Ingredients

  • 250 ml water
  • 60 g butter
  • 20 g sugar
  • 150 g plain flour
  • 2 eggs
  • neutral oil for frying
  • 80 g sugar
  • 1 tsp cinnamon

Method

  1. Step 1

    Heat the water, butter, and sugar in a saucepan until the butter melts and the liquid just starts to simmer.

  2. Step 2

    Tip in the flour all at once and stir hard until a smooth dough forms and pulls away from the sides of the pan.

  3. Step 3

    Cool the dough for 5 minutes, then beat in the eggs one at a time until the mixture is smooth and pipeable.

  4. Step 4

    Heat the frying oil to 175°C.

  5. Step 5

    Pipe short lengths of dough into the hot oil and fry until deep golden and crisp.

  6. Step 6

    Drain the churro bites on paper towels.

  7. Step 7

    Toss them in the cinnamon sugar while still warm and serve immediately.
