Ingredients

  • 230 g lean turkey mince
  • 2 whole-wheat tortillas
  • 1 large bell pepper
  • 80 g spinach
  • 1 large tomato
  • 1 tsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 120 g Greek yogurt
  • to serve avocado
  • 2 tbsp chopped cilantro

Method

  1. Step 1

    Measure out the 230 g lean turkey mince and loosen it with your hands so it cooks evenly.

  2. Step 2

    Slice the bell pepper into thin strips (1 large), roughly chop the spinach (80 g), and dice the tomato (1 large).

  3. Step 3

    Brown the turkey mince in a hot pan until fully cooked, then stir in the vegetables and cook for 2 more minutes.

  4. Step 4

    Mix the ingredients for the salsa yogurt sauce until smooth.

  5. Step 5

    Warm the 2 whole-wheat tortillas in a dry pan for 20 seconds per side so they stay flexible when rolled.

  6. Step 6

    Spoon the filling down the center of each tortilla, add the sauce, and top with avocado.

  7. Step 7

    Fold in the sides, roll the burritos tightly, and toast the seam side in the pan for 1 minute if you want extra crunch.
