Thai Basil Mushroom Quinoa Skillet

Ingredients
- 350 g mushrooms, sliced
- 300 g quinoa
- 150 g green beans
- 1 red pepper, diced
- 550 ml vegetable broth
- 45 ml soy sauce and 15 ml lime juice
- 20 g basil leaves
- 15 ml oil
- salt
- black pepper
Method
Step 1
Heat 15 ml oil in a deep skillet over medium heat and cook 150 g green beans for 2 to 3 minutes until softened.
Step 2
Add 350 g mushrooms, sliced and 300 g quinoa and stir them together for 30 seconds.
Step 3
Pour in 550 ml vegetable broth and bring the skillet to a gentle boil.
Step 4
Cover the skillet, reduce the heat, and cook it until the grain is tender.
Step 5
Add 1 red pepper, diced and cook it for 2 to 3 minutes until just tender.
Step 6
Stir in 45 ml soy sauce and 15 ml lime juice and season the skillet with salt and black pepper.
Step 7
Finish the skillet with 20 g basil leaves and spoon it into bowls.
