Steak and Mushroom Protein Noodles

Ingredients
- 220 g flank steak
- 190 g udon noodles
- 180 g mushrooms
- 2 small heads bok choy
- 1 small red onion
- 1 tsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 garlic clove
- 1 tbsp soy sauce
- 2 tbsp sliced spring onion
- 1 tsp sesame seeds
Method
Step 1
Cook the 190 g udon noodles according to the package directions, rinse briefly, and set them aside.
Step 2
Slice the 220 g flank steak thinly against the grain so it stays tender when cooked.
Step 3
Slice the mushrooms (180 g), slice the bok choy (2 small heads), and slice the red onion thinly (1 small).
Step 4
Season the flank steak with 1 tsp olive oil, 1/2 tsp salt, 1/4 tsp black pepper.
Step 5
Sear the steak strips in a very hot pan for 1 to 2 minutes per side, then remove them so they stay tender.
Step 6
In the same pan, cook the vegetables for 2 to 4 minutes, then stir in the ingredients for the soy garlic glaze. Use a splash of the cooking water to loosen the sauce if needed.
Step 7
Add the drained udon noodles, return the cooked flank steak to the pan, and toss everything together for 1 minute so the sauce coats every piece.
Step 8
Taste and adjust the seasoning, then plate the pasta and finish with spring onion and sesame seeds.
