Sheet-Pan Tofu Sesame Roast

Ingredients
- 250 g extra-firm tofu
- 250 g sweet potatoes
- 180 g broccoli
- 1 large carrot
- 1 tsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp soy sauce
- 1 tbsp soy sauce
- 1 tsp sesame seeds
- 2 tbsp sliced spring onion
Method
Step 1
Preheat the oven to 220°C and line a large sheet pan with baking paper.
Step 2
Cut the 250 g sweet potatoes into small cubes, toss them with oil and salt, and roast them until tender at the edges.
Step 3
Press the 250 g extra-firm tofu for 10 minutes, then cut it into bite-sized cubes.
Step 4
Cut the broccoli into small florets (180 g), and cut the carrot into matchsticks (1 large).
Step 5
Toss the extra-firm tofu with 1 tsp olive oil, 1/2 tsp salt, 1/4 tsp black pepper, 1 tsp soy sauce. Spread it on the tray with the vegetables, keeping the pieces in a single layer.
Step 6
Roast everything until the vegetables are tender and the protein is cooked through. As a guide, fish usually needs 10 to 12 minutes, while chicken, tofu, or meatballs usually need 15 to 20 minutes.
Step 7
While the tray bakes, mix the ingredients for the sesame soy glaze so it is ready to spoon over at the end.
Step 8
Divide the tray bake between plates, spoon over the sauce or pan juices, and finish with sesame seeds and spring onion.
