Sheet Pan Coconut Curry Tofu
Preheat the oven to 220°C and line a large tray with baking paper.

Ingredients
- 400 g extra-firm tofu, cubed
- 150 g mixed greens
- 150 g cucumber, diced
- 280 g couscous
- 150 ml light coconut milk and 20 g curry paste
- 15 ml chopped coriander
- 15 ml olive oil
- salt
- black pepper
Method
Step 1
Preheat the oven to 220°C and line a large tray with baking paper.
Step 2
Spread 150 g mixed greens and 150 g cucumber, diced on the tray.
Step 3
Add 400 g extra-firm tofu, cubed to the tray and season everything with salt and black pepper.
Step 4
Drizzle the tray with 150 ml light coconut milk and 20 g curry paste and toss everything until coated.
Step 5
Roast the tray for 18 to 22 minutes until the vegetables are tender and browned in spots.
Step 6
Cook 280 g couscous according to the package directions while the tray roasts.
Step 7
Serve the roasted mixture over the cooked couscous and finish it with 15 ml chopped coriander.
