Ingredients
- 450 g lean ground turkey
- 300 g rice
- 15 ml olive oil
- 5 ml smoked paprika
- 85 g corn
- 70 g diced red bell pepper
- 70 g shredded zucchini
- 60 ml salsa
- 70 g diced avocado
- 3 g chopped cilantro

Method
Step 1
Cook 300 g rice according to the package directions and keep it warm.
Step 2
Heat 15 ml olive oil in a skillet over medium heat and cook 450 g lean ground turkey for 6 to 7 minutes until browned.
Step 3
Season the turkey with salt, black pepper, and 5 ml smoked paprika.
Step 4
Add 85 g corn, 70 g diced red bell pepper, and 70 g shredded zucchini and cook for 2 minutes.
Step 5
Stir in 60 ml salsa and cook for 1 minute so the mixture turns glossy.
Step 6
Divide the rice between bowls and top it with the turkey mixture and 70 g diced avocado.
Step 7
Finish with 3 g chopped cilantro and serve right away.
