Pear Cardamom Loaf Cake
Preheat the oven to 180°C and grease a loaf tin or line a muffin tray.

Ingredients
- 220 g plain flour
- 90 ml neutral oil
- 100 g sugar
- 160 g diced pear and 3 g cardamom
- 6 g baking powder
- 120 ml plant milk
- 1 g sea salt
Method
Step 1
Preheat the oven to 180°C and grease a loaf tin or line a muffin tray.
Step 2
Add 90 ml neutral oil, 6 g baking powder, and 1 g sea salt to a bowl and whisk them together.
Step 3
Add 220 g plain flour, 100 g sugar, 160 g diced pear and 3 g cardamom, and 120 ml plant milk to a second bowl and stir until smooth.
Step 4
Pour the wet mixture into the dry mixture and fold it gently until no dry streaks remain.
Step 5
Transfer the batter to the tin or muffin tray and smooth the top lightly.
Step 6
Bake the cake until the center is set and a skewer comes out clean, about 22 to 30 minutes for muffins or 40 to 50 minutes for a loaf.
Step 7
Cool the cake in the tin for 15 minutes before turning it out to cool completely.
