Peanut Tofu Rainbow Noodle Bowls

Ingredients

  • 400 g extra-firm tofu, cubed
  • 225 g rice noodles
  • 15 ml oil
  • 50 g shredded carrots
  • 50 g thinly sliced red cabbage
  • 60 ml peanut sauce
  • 70 g sliced cucumber
  • 6 g chopped peanuts
  • salt
  • black pepper

Method

  1. Step 1

    Cook 225 g rice noodles according to the package directions, drain them, and set them aside.

  2. Step 2

    Pat 400 g extra-firm tofu dry, cut it into cubes, and season it lightly with salt and black pepper.

  3. Step 3

    Heat 15 ml oil in a skillet over medium-high heat and cook the tofu for 6 to 7 minutes until golden on most sides.

  4. Step 4

    Add 50 g shredded carrots and 50 g thinly sliced red cabbage and cook for 2 minutes.

  5. Step 5

    Stir in 60 ml peanut sauce and add the cooked noodles to the skillet.

  6. Step 6

    Toss everything together until the noodles are coated, then divide the mixture between bowls.

  7. Step 7

    Finish with 70 g sliced cucumber and 6 g chopped peanuts before serving.
