Miso Ginger Mushroom Noodles
Cook 250 g noodles according to the package directions, drain it, and keep it ready.

Ingredients
- 350 g mushrooms, sliced
- 250 g noodles
- 15 ml oil
- 150 g green beans
- 1 red pepper, diced
- 30 g white miso and 30 ml water
- 2 sliced spring onions
- salt
- black pepper
Method
Step 1
Cook 250 g noodles according to the package directions, drain it, and keep it ready.
Step 2
Season the mushrooms with salt and black pepper.
Step 3
Heat 15 ml oil in a large skillet over medium-high heat and cook the mushrooms for 6 to 7 minutes until browned and tender.
Step 4
Add 150 g green beans and 1 red pepper, diced and cook them for 2 minutes until just tender.
Step 5
Stir in 30 g white miso and 30 ml water and let it bubble for 1 minute.
Step 6
Add the cooked noodles and toss everything together until coated.
Step 7
Finish the noodles with 2 sliced spring onions and serve them hot.
