Mediterranean Tuna Couscous Bowls

Ingredients
- 2 cans tuna, drained
- 340 g cooked couscous
- 140 g cucumber and 140 g tomatoes
- 30 ml lemon vinaigrette
- 50 g feta and 35 g olives
Method
Step 1
Warm 2 cans tuna, drained in a large skillet over medium heat for 2 minutes.
Step 2
Add 140 g cucumber and 140 g tomatoes and cook it for 2 to 3 minutes until the vegetables are tender.
Step 3
Stir in 30 ml lemon vinaigrette and let it simmer for 1 minute.
Step 4
Add 340 g cooked couscous and toss until everything is coated and heated through.
Step 5
Cook the mixture for 2 more minutes so the sauce settles into the pan.
Step 6
Finish the pan with 50 g feta and 35 g olives.
Step 7
Spoon the meal into bowls or onto plates and serve it hot.
