Mediterranean Salmon Quinoa Bowls

Ingredients
- 450 g salmon, cut into chunks
- 300 g cooked quinoa
- 15 ml olive oil
- 5 ml dried oregano
- 70 g halved cherry tomatoes
- 15 ml lemon juice
- 70 g diced cucumber
- 35 g sliced olives
- 40 g crumbled feta
- 3 g chopped parsley
- salt
- black pepper
Method
Step 1
Cook 300 g quinoa according to the package directions and keep it warm.
Step 2
Season 450 g salmon, cut into chunks, with salt, black pepper, and 5 ml dried oregano.
Step 3
Heat 15 ml olive oil in a skillet over medium heat and cook the salmon for 6 to 8 minutes, turning gently, until opaque and cooked through.
Step 4
Add 70 g halved cherry tomatoes to the pan and cook them for 1 minute.
Step 5
Stir in 15 ml lemon juice so the salmon is lightly coated.
Step 6
Divide the quinoa between bowls and top it with the salmon, 70 g diced cucumber, 35 g sliced olives, and 40 g crumbled feta.
Step 7
Finish with 3 g chopped parsley and serve immediately.
