Lemon Herb Tuna Orzo Bowls
Cook 300 g orzo according to the package directions, drain it, and keep it warm.

Ingredients
- 2 cans tuna, drained
- 300 g orzo
- 15 ml olive oil
- 70 g chopped zucchini
- 70 g halved cherry tomatoes
- 15 ml lemon juice
- 40 g crumbled feta
- 70 g diced cucumber
- 3 g chopped parsley
- salt
- black pepper
Method
Step 1
Cook 300 g orzo according to the package directions, drain it, and keep it warm.
Step 2
Heat 15 ml olive oil in a skillet over medium heat and add 2 cans tuna, drained.
Step 3
Add 70 g chopped zucchini and 70 g halved cherry tomatoes and cook for 2 minutes.
Step 4
Season the pan with salt, black pepper, and 15 ml lemon juice.
Step 5
Add the cooked orzo and toss everything together until well combined.
Step 6
Divide the mixture between bowls and top it with 40 g crumbled feta and 70 g diced cucumber.
Step 7
Finish with 3 g chopped parsley before serving.
