Korean Beef Cucumber Rice Bowls

Ingredients
- 455 g lean ground beef
- 320 g cooked rice
- 95 g shredded carrots
- 140 g diced cucumber
- 30 ml gochujang mixed with 30 ml soy sauce
- 1 fried egg
- 15 ml oil
- salt
- black pepper
Method
Step 1
Prepare 320 g cooked rice and keep it warm.
Step 2
Season 455 g lean ground beef with salt and black pepper.
Step 3
Heat the oil in a skillet over medium-high heat, add the protein, and cook it until browned and cooked through.
Step 4
Cook 95 g shredded carrots and 140 g diced cucumber in the same pan for 2 to 3 minutes until crisp-tender.
Step 5
Stir in 30 ml gochujang mixed with 30 ml soy sauce and cook everything for 1 minute so the sauce coats the pan ingredients.
Step 6
Divide the 320 g cooked rice between bowls and top it with the cooked mixture.
Step 7
Finish each bowl with 1 fried egg and serve them right away.
