Green Goddess White Bean Salad

Ingredients
- 400 g white beans, drained
- 220 g cooked rice
- 150 g mixed greens
- 150 g sugar snap peas
- 1 yellow pepper, sliced
- 60 ml vegan green goddess dressing
- 15 ml chopped dill
- 15 ml oil
- salt
- black pepper
Method
Step 1
Cook 220 g cooked rice according to the package directions if needed, then let it cool slightly.
Step 2
Season the beans with salt and black pepper.
Step 3
Heat 15 ml oil in a skillet over medium-high heat and cook the beans for 3 to 4 minutes until hot.
Step 4
Add 150 g mixed greens to a large bowl along with 150 g sugar snap peas and 1 yellow pepper, sliced.
Step 5
Add the warm grain and the cooked protein to the bowl.
Step 6
Drizzle the salad with 60 ml vegan green goddess dressing and toss it gently.
Step 7
Finish the salad with 15 ml chopped dill and divide it between bowls.
