Ingredients

  • 450 g chicken thighs, cut into bite-sized pieces
  • 300 g cooked farro or brown rice
  • 15 ml olive oil
  • 70 g sliced cucumber
  • 85 g halved sugar snap peas
  • 60 ml green goddess dressing
  • 70 g avocado slices
  • 20 g shredded lettuce
  • 3 g chopped dill
  • salt
  • black pepper

Method

  1. Step 1

    Prepare 300 g cooked farro or brown rice and keep it warm.

  2. Step 2

    Season 450 g chicken thighs, cut into bite-sized pieces, with salt and black pepper.

  3. Step 3

    Heat 15 ml olive oil in a skillet over medium heat and cook the chicken for 6 to 7 minutes until browned and cooked through.

  4. Step 4

    Add 70 g sliced cucumber and 85 g halved sugar snap peas to the pan and cook them for 1 minute.

  5. Step 5

    Stir in 60 ml green goddess dressing so the chicken and vegetables are lightly coated.

  6. Step 6

    Divide the grains between bowls and top them with the chicken mixture, 70 g avocado slices, and 20 g shredded lettuce.

  7. Step 7

    Finish with 3 g chopped dill and serve the bowls immediately.
