Greek Chicken Pita Melts

Ingredients

  • 4 pita breads
  • 480 g cooked chicken, chopped
  • 45 ml tzatziki
  • 140 g diced cucumber and 70 g tomato
  • 50 g crumbled feta
  • 15 ml butter or olive oil

Method

  1. Step 1

    Lay out the 4 pita breads and spread each slice or half with 45 ml tzatziki.

  2. Step 2

    Warm 480 g cooked chicken, chopped in a skillet over medium heat for 2 minutes.

  3. Step 3

    Pile the protein onto the bread and top it with 140 g diced cucumber and 70 g tomato and 50 g crumbled feta.

  4. Step 4

    Close the sandwiches and brush the outsides lightly with butter or olive oil.

  5. Step 5

    Place the sandwiches in a hot skillet or press and cook them for 2 to 3 minutes per side until golden.

  6. Step 6

    Rest the sandwiches for 1 minute so the filling settles.

    Slice and serve them while the cheese is still melted.
