Ingredients

  • 4 ciabatta rolls
  • 2 cooked chicken cutlets, sliced
  • 45 ml basil pesto
  • 1 sliced tomato and 35 g baby spinach
  • 60 g sliced mozzarella
  • 15 ml butter or olive oil

Method

  1. Step 1

    Lay out the 4 ciabatta rolls and spread each slice or half with 45 ml basil pesto.

  2. Step 2

    Warm 2 cooked chicken cutlets, sliced in a skillet over medium heat for 2 minutes.

  3. Step 3

    Pile the protein onto the bread and top it with 1 sliced tomato and 35 g baby spinach and 60 g sliced mozzarella.

  4. Step 4

    Close the sandwiches and brush the outsides lightly with butter or olive oil.

  5. Step 5

    Place the sandwiches in a hot skillet or press and cook them for 2 to 3 minutes per side until golden.

  6. Step 6

    Rest the sandwiches for 1 minute so the filling settles.

    Slice and serve them while the cheese is still melted.
