Ingredients
- 480 g rotisserie chicken, chopped
- 110 g arugula
- 140 g cooked pasta, 140 g tomatoes, and 70 g cucumber
- 45 ml balsamic vinaigrette
- 60 g mozzarella pearls and 10 g basil
Method
Step 1
Cook or warm 480 g rotisserie chicken, chopped until it is hot and lightly browned.
Step 2
Add 110 g arugula to a large bowl.
Step 3
Top the greens with 140 g cooked pasta, 140 g tomatoes, and 70 g cucumber.
Step 4
Slice or break up the protein and add it over the salad base.
Step 5
Drizzle the salad with 45 ml balsamic vinaigrette.
Step 6
Toss the salad gently and finish it with 60 g mozzarella pearls and 10 g basil.
Step 7
Divide the salad between bowls and serve it right away.
