- 220 g lean ground turkey
- 150 g cooked rice
- 120 g bell pepper diced
- 80 g onion diced
- 1 tsp olive oil
- 1 tbsp tomato paste
- 1 tsp taco seasoning
- 30 g shredded cheese light
- 2 tbsp Greek yogurt
- 1 tbsp chopped cilantro
Method
Step 1
Heat olive oil in a skillet and cook onion and bell pepper for 2 minutes.
Step 2
Add ground turkey and cook for 5 minutes, breaking it up as it browns.
Step 3
Stir in tomato paste and taco seasoning with a splash of water.
Step 4
Add cooked rice and toss everything together for 2 minutes.
Step 5
Top with shredded cheese and let it melt briefly.
Step 6
Finish with Greek yogurt and cilantro before serving.
