Ingredients

  • 220 g extra-firm tofu cubed
  • 160 g cooked rice noodles
  • 120 g broccoli slaw
  • 80 g bell pepper sliced
  • 1 tsp olive oil
  • 1 tbsp peanut butter
  • 1 tbsp soy sauce
  • 1 tsp lime juice
  • 1 tsp chili flakes
  • 1 tbsp chopped peanuts

Method

  1. Step 1

    Pat tofu dry and season with salt and pepper.

  2. Step 2

    Sear tofu in olive oil for 4 minutes until lightly crisp.

  3. Step 3

    Add broccoli slaw and bell pepper and stir-fry 2 minutes.

  4. Step 4

    Whisk peanut butter, soy sauce, lime juice, and a splash of water.

  5. Step 5

    Add noodles and sauce to the pan and toss until glossy.

  6. Step 6

    Finish with chili flakes and chopped peanuts.
