Ingredients
- 220 g egg whites
- 2 whole eggs
- 1 large whole-wheat tortilla
- 100 g mushrooms sliced
- 80 g spinach
- 60 g bell pepper diced
- 1 tsp olive oil
- 30 g light cheddar
- 2 tbsp salsa
- 1/2 tsp salt
Method
Step 1
Whisk egg whites and whole eggs with salt.
Step 2
Cook mushrooms and bell pepper in olive oil for 2 minutes.
Step 3
Add egg mixture and scramble until almost set.
Step 4
Fold in spinach and cook just until wilted.
Step 5
Fill tortilla with scramble, cheddar, and salsa.
Step 6
Roll tightly and toast 1 minute per side before serving.
